Jackelyn the Pumpkin is the Pumpkin held by Ichabod Crane, also known as The Headless Horseman, or at least they WERE the pumpkin held by Ichabod Crane, but he dropped them.

And Ichabod doesn't have a head, making it very hard to see where he dropped them. It is Jackelyn's goal to get back to Ichabod so they can continue terrorizing Sleepy Hollow together.
